My husband over the years has turned into the best “Rustic” cook I know. He doesn’t spend a lot of time on measuring or searching for the perfect ingredients.
Instead, he has an idea in his mind of what will taste good, easy to make and filling for our family that includes three (3) teenage sons.
The Ooey-Gooey Cheesy “Rustic” Taco Bake is one of my families favorite dishes. Layer after layer of Taco/Nacho fixins including re-fried beans, Spanish rice and Yes! cheese is so filling one serving is enough to put you to sleep.
The beauty of “Rustic Cooking” is there is no right or wrong way in which to cook a dish. Most of the ingredients come from items already in the home. It’s essentially “pantry” cooking. Each time the recipe changes and evolves, trying this ingredient today, eliminating another the next time.
Ooey-Gooey Cheesy Rustic Taco Bake (Recipe)
Line glass baking dish with soft tortillas (approx 4-5) depending on dish size
spread with one can re-fried beans
add cooked Spanish or any flavor cooked rice
add half jar of salsa
Layer with nacho chips, Taco seasoned ground beef, or turkey and cheese.
Cover and bake 30 minutes in 350′ degree oven.
Let cool slightly slice into squares for serving
