Cabbage is a dish I could serve to my family everyday of the week and no one would complain. I know most people would say cabbage is an easy dish to cook but I DESPISE chopping cabbage. I usually buy cabbage from the Detroit Eastern Market and I must admit those cabbages are HUGE and very awkward to cut.
So, last week I was last minute shopping for Easter Dinner when I had an epiphany.. Yeah, I get those from time to time. I was in the fresh produce section of my favorite grocery store looking over the veggies when I noticed they had bags of fresh coleslaw mix on sale.
Now, I hadn’t planned on cooking any coleslaw anytime soon but the deal was kinda hard to pass up. Jump ahead to my epiphany… I looked in my grocery cart, I had (two) 2 heads of cabbage and a bag of carrots that would’ve cost me around $6.00 and change. In my hand I held two bags of coleslaw mix that consisted of fresh cabbage and carrots that was on sale 2 bags for $2.00. It was a win -win for me. It was one of those times when I said to out loud “Why hadn’t I thought of this before?” I didn’t have to chop and shred the cabbage or the carrots, all of the prep work had been done for me and I was saving over $4.00.
Easy Steam Cabbage Recipe
2 bags fresh coleslaw mix
1 small onion (chopped)
salt & pepper (1 tsp. each)
1 tsp. butter or margarine
Open and rinse coleslaw mix in a colander. Chop small onion. Drain and place in large pot. Season with salt and pepper add butter. Cover with lid and cook on medium heat for 30 minutes. Done! Enjoy!
