Rice is a big staple in most of my home cooked meals. It’s a great filler and a very versatile food it goes with just about everything. Because it is extremely expensive to eat out with my family of five I try to recreate some of my family’s restaurant favorites.

the kitchen. One of my family’s favorite dishes is sesame chicken and chicken
fried rice. Yes, we do love our chicken. My version of chicken fried rice
varies from season to season. In the summer I add fresh vegetables like asparagus
or fresh peas I get from the Eastern Market our local Farmer’s Market.
Recreating recipes from our favorite Chinese takeout can be challenging but I
think I’ve perfected my version of sesame chicken and chicken fried rice.
Chunks of chicken breast are dredged in flour and fried for about 10 minutes then removed from the oil.Very little seasoning is used because the seasoning comes from the sauce which is infused with pineapple juice, brown sugar and sesame seed oil. The meal is very quickly prepared despite frying the chicken and then baking it. Left over baked chicken and sesame seed oil and soy sauce is used to make the chicken fried rice.
The Minute® Ready to Serve Rice is completely cooked so I only have to prepare the sauce and chicken. I quickly toss all of the ingredients in the skillet for a quick fry.The rice can be warmed in the microwave but I prefer the skillet for this recipe. In all, my version of chicken fried rice takes about 7 minutes and taste just as good as the rice we get from our local Chinese takeout and costs a lot less per serving. The end result is five (5) clean plates and five (5) full bellies. A total win -win in anyone’s book whose keeping score on “Winning Family Meals.”
Sesame Chicken Recipe (My Version)
- 5 Boneless Skinless Chicken Breast (cut in chunks)
- 1/2 C. All purpose flour
- 1/2 tsp salt
- 1/2 tsp pepper
- 3 tsp sesame seeds
- 1 tsp sesame seed oil
- 1/4 C. dark brown sugar
- 1/4 C. Pineapple Juice
- 4 Tbsp Honey
- 2 Cups Heinz Original BBQ Sauce
- 1/2 C. Vegetable or Canola Oil for frying
In a large cup (I recycle Big Gulp cups from 7-11 or any large plastic drinking cups) mix together the BBQ sauce, honey, pineapple juice, dark brown sugar and sesame seed oil. Set aside. Season chicken breast with salt and pepper and dredge in flour. Pour oil in a heavy bottom skillet and fry chicken for 5 minutes on each side (10 minutes total) Immediately (dunk douse submerge) each piece of chicken into sauce. Place each piece of chicken on a foil lined baking sheet cook in 350 degree oven covered for 25 minutes. Sprinkle with sesame seeds and finish cooking uncovered for 10 minutes. Turn the oven off leave chicken in oven to rest.
Chicken Fried Rice (My Version)
- 1 baked boneless skinless chicken breast (I use leftover chicken breast but you can use ready cooked chopped chicken breast 1/2 cup)
- Minute® Ready to Serve Rice
- 1/4 C. soy sauce
- 3 tsp sesame seed oil
- 1/2 C onions (yellow, white or green)
- 3 tsp vegetable or canola oil
In a medium skillet on med heat place vegetable oil, sesame seed oil and onions. Pour soy sauce then add chicken. Cook 3-4 minutes coating chicken. Add rice cook toss and coat all ingredients 3 minutes and done.
